We spent over a year trying to perfect an organic version. Without the use of hydrogenated oil or high fructose corn syrup to turn the peanut butter into a paste-like filling, it"s very hard to get the crackers to stay together. We ended up working with a peanut butter cooperative to develop an organic shelf-stable peanut butter and bought specialized type of equipment to make them. When it was all said and done, we were the first company in the world to create an organic sandwich cracker! The peanut butter for our sandwich crackers is made by roasting and grinding organically-grown Valencia peanuts. We then spread it on our Organic Classic Rich Crackers, which are made with organic red winter wheat, and have a buttery, toasted flavor.
