Black garlic is aged white garlic, with a mellow flavour and sweet taste. Great in pasta sauces and risottos, or with meat and fish, it adds a new dimension to cooking. The ageing process removes the garlic after-smell and produces a molasses-balsamic flavour, which can be added to almost any dish or eaten straight from the bulb.
