The Dexter-Russell 9” Fillet Knife – Dexter-Russell Series (2333-9PCP) provides an exceptionally long blade with a straight edge and pointed tip. This long blade looks somewhat like a letter opener although this knife is definitely designed for use in the food service industry. The handle is made out of beechwood securely fastened on either side of the hand-sharpened and honed high-carbon stainless steel blade tang with strong brass rivets.
