Ancho Chili, known also as Poblano, offers a nutty mild flavor. Green when fresh, it turns a very dark purple to black color when dried. Its flavor has been compared to a wide range of sensations, from chocolate to tobacco, coffee and wood. Ancho provides a deep chili flavor without the scorching heat; maybe thats why this variety is among the most commonly used of all Mexican chilis.
