Every "chub" of salame goes through an unhurried, comprehensive process, which includes three weeks in our state-of-the-art Travaglini drying rooms. Properly aged to perfection, the salame chubs form a gray-white powdery layer on their exterior - the sign of real Italian dry salame. Gallo has been crafting their Salami for over 100 years from a secret family recipe of premium quality pork, Sauterne wine and select spices.
