Great Northern beans are the dried, mature seeds of green beans. These medium-sized white beans were domesticated independently in ancient Mesoamerica and the Andes, and now grown worldwide.Great Northern beans are traditionally prepared in the United States as Boston baked beans, and in France as the dish known as cassoulet. Great Northern beans receptively take on the flavors of the foods with which they are cooked.
