Great Recipe!Start to Finish: 15 minutesDish Type: AppetizerIngredients1 medium zucchini, sliced2 tablespoons extra virgin olive oil2 tablespoons Ken"s® Lite Balsamic VinaigretteSalt and ground black pepper, to taste1/2 cup Parmesan cheese, grated DirectionsPreheat broiler.Toss zucchini slices with extra virgin olive oil, 2 tablespoons Ken"s® Lite Balsamic Vinaigrette, salt and pepper to taste.Place in a shallow baking pan and broil 3-5 minutes without turning, until tender.Remove pan from oven, add remaining Ken"s® Lite Balsamic Vinaigrette; toss to coat.Broil for another 2 minutes, remove and sprinkle Parmesan cheese over the zucchini.Broil once more until cheese is melted.Let cool.
