Ingredients:3 1/2 2 2 3cups Life Cereal (any flavor) cup shredded coconut tablespoons sugar teaspoons grated lemon zest tablespoons butter or margarine, melted1 1 1 1/2 can (14 ounces) sweetened condensed milk container (6 ounces) lemon-flavored yogurt egg cup fresh lemon juice Instructions:1. 2. 3. 4. 5. 6. Preheat oven to 350°F. Line an 8-inch square pan with aluminum foil extending the ends over the edge; lightly grease with non-stick cooking spray. Crush cereal in a resealable food storage bag using a rolling pin or mallet to make fine crumbs. Place cereal crumbs, coconut, sugar and lemon zest in bowl; toss lightly with fork to combine. Pour melted butter over crumbs and mix well. Remove and reserve 1/2 cup of crust mixture. Press remaining crust mixture firmly into bottom of prepared pan. Bake 10 minutes. Combine sweetened condensed milk, yogurt and egg in medium bowl using a metal whisk. Add lemon juice; whisk until smooth. Spread filling evenly over crust. Sprinkle reserved crumbs over top, patting lightly into filling. Bake 35-40 minutes or until filling is set. Cool at room temperature for 1 hour, then refrigerate until cold. Using edges of foil, lift bars out of pan and transfer to a cutting board. Cut into bars for serving. Recipe Yield: 16 bars Variation: Thin and Creamy Lemon Bars Prepare as above using a foil-lined 13 x 9-inch baking pan. Press all of crumb mixture into prepared pan (do not reserve crumbs for topping). After partially baking crust 10 minutes, pour filling over top and spread gently to edges. Bake 18-20 minutes or until set. Cool as directed above and cut into 24 bars.Cook"s Tip: Use the flat bottom of a metal measuring cup to firmly press the crumbs into the foil-lined baking pan.
