The Smokehouse sausage casings are the outer layer of the sausage meat. These casings are made of protein fibers to produce a strong yet thin-walled casing that is permeable to smoke and moisture. The casings are elastic and will shrink with the product during the smoking and curing process. They are smoke colored, and produce an attractive finished product.
