In addition to nutrients, these source foods contain countless natural phytochemicals and bioactive compounds, many of which are considered as contributing to human health. Fermentation further endows these foods with yet more potential for health benefits. Cabbage, one of the source foods in Best Fermented Superfoods, contains compounds called glucosinolates. During fermentation, breakdown products of glucosinolates form, most notably isothiocyanates, indole-3-carbinol, and sulforaphane.
