Vitamin C is the most important water-soluble antioxidant nutrient and is involved in a wide variety of biochemical reactions throughout the body. Included in its functions is the synthesis of collagen, the basis of connective tissue, found in virtually every cell of the body. Because of its molecular structure, vitamin C is able to donate hydrogen atoms from two hydroxyl positions to neutralize free radicals. The body uses vitamin C during detoxification and anti-inflammatory processes, as well as immune system functions, including white blood cell production, histamine release and degradation, the reduction of glutathione, and the metabolism and protection of several other nutrients. In combination with other nutrients, vitamin C also supports the production of certain neurotransmitters. The latest addition to our Vitamin C line is a unique cassava root (of the potato family) source vitamin C, available in both powder and capsules. Cassava, or Manihot esculenta, is a bushy South American shrub with long tuberous roots, which are traditionally eaten like potatoes. Cassava root starch serves as the starting material for a multi-step process of manufacturing ascorbic acid. Corn-derived ingredients are used in the processing but it is generally well tolerated by individuals unable to tolerate other sources of vitamin C.
